Yes you read that right...Lemon Ricotta Pancakes! I thought I was going crazy when I first heard about it...but we have now attempted these babies twice. The first time was all from scratch the second attempt was with a pre-boxed pancake mix.
The first recipe was definitely much fluffier and sweeter....but for simplicity sake I wanted to see if I could get similar results with the pre-boxed mix off the supermarket shelf. So I went to give it a try tonight. Yes you can do it with a pre-mix but the pancakes definitely are not the same....but still yummy.
So here is what you need to do....
Follow the directions on your pancake mix box
Add Ricotta...I added half of the 16oz container I had left
I zested an entire lemon....yum!
Mix well to get the lemon evenly distributed but be careful not to de-lump the ricotta. You want it to stay lumpy.
Start cooking the pancakes.
The ricotta will keep its creaminess as the pancake cooks....
Best served with a little butter and some powdered sugar sprinkled over the top.
I make a bunch and freeze them in ziplocks for the weeks breakfast menu....
